12 GROUNDCOVER NEWS FOOD Fool-proof hummus LUIZA DUARTE CAETANO Groundcover contributor Ingredients: 2 - 16 oz cans of chickpeas, or 1 lb dry chickpeas, see below 1/2 cup tahini 1/2 cup lemon juice 3 garlic cloves, peeled 1/4 cup olive oil 2 tsp salt 2 tsp cumin 1/4 cup water Directions: Combine all ingredients except water in food processor or blender. Process for 2 minutes or until fully combined. Add water and process until desired consistency. Add additional salt to taste. If using dried chickpeas, boil for 45 minutes with 1 tsp of baking soda. Cool completely before processing with other ingredients. (You can use the water used to boil when thinning the hummus to add flavor and nutrients.) Run cold water over the cooked chickpeas to speed up this process. Serve hummus with vegetables, bread, or crackers for dipping.
