12 GROUNDCOVER NEWS FOOD Protein-packed garbanzo bean stir-fry BRANDON BAY U-M student contributor Ingredients: 1 can garbanzo beans (or 1 cup cooked from dry) 1 carrot, thinly sliced 1 small onion, chopped 1 bell pepper, sliced 2 cloves garlic, minced 2 tbsp soy sauce 1 tbsp olive oil Optional: pinch of red pepper flakes, sesame seeds, chopped cilantro Directions: Heat olive oil in a pan over medium heat. Add onion and garlic, cook until soft. Toss in carrots and bell pepper, cook for 5 minutes. Add garbanzo beans and soy sauce. Stir-fry for another 5–7 minutes. Sprinkle with red pepper flakes, sesame seeds or cilantro if using. Serve with rice. Double the batch and use leftovers in wraps or salads.
