12 GROUNDCOVER NEWS FOOD Baked caramel popcorn ELIZABETH BAUMAN Groundcover contributor Ingredients: 5-7 quarts popped popcorn 2 cups brown sugar ½ tsp. salt ½ tsp. vanilla 1 cup butter ½ cup light syrup ½ tsp. baking soda Directions: Melt butter and stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Once boiling, leave for 5 minutes without stirring. Then remove from heat. Add baking soda and vanilla. In a very large bowl, pour over popcorn and mix well. Spread onto 2 shallow layer large cooking sheets. Bake at 250 degrees for one hour, stirring every 15 minutes. Cool and break apart. Store in an airtight container. Such a special treat, you won’t be able to stop eating the corn!
