16 GROUNDCOVER NEWS FOOD Vegetarian taco salad ELIZABETH BAUMAN Groundcover contributor Ingredients 4 cups romaine lettuce 1 red bell pepper, finely chopped 1 1⁄2 cup black beans 1 cup corn (roasted works best, removed from husk) 3/4 cup finely chopped tomatoes 1⁄3 cup thinly sliced green onion 3⁄4 cup grated cheddar cheese 1 cup crushed tortilla chips Dressing: 1/3 cup sour cream 3 T. red salsa 3/4 t. ground cumin Salt to taste 1⁄2 lime Directions Make the dressing by using a small blender to puree the sour cream, salsa, cumin, salt and juice from the lime half. Chop the lettuce and combine chopped vegetables with the beans, corn, chips and cheese. Incorporate the dressing and serve immediately.
