12 GROUNDCOVER NEWS FOOD Roasted garlic aioli ELIZABETH BAUMAN Groundcover contributor Ingredients: 1 garlic bulb 1 tablespoon olive oil 1 6 oz jar artichoke hearts 3 Tablespoons of lemon juice 1 Tablespoon of Dijon mustard 1 cup mayonnaise Salt and pepper to taste Directions: Cut off the pointed end of the garlic bulb and place the bulb on a piece of tin foil. Drizzle with tablespoon of oil. Roast at 400 degrees for 45 minutes or until soft. Remove from the oven and let cool; squeeze pulp from garlic cloves. Place in a blender with artichoke, lemon and mustard. Blend for a few seconds and JULY 28, 2023 then add mayonnaise. Blend well. Chill. Serve with fresh vegetables, blanching the veggies if needed.
