16 GROUNDCOVER NEWS FOOD Chicken Shawarma ELIZABETH BAUMAN Groundcover contributor Ingredients 1 1/2 T. ground cumin 1 1/2 T. turmeric powder 1 1/2 T. ground coriander 1 1/2 T. garlic powder 1 1/2 T. paprika 1 t. ground cloves 1 1/4 t. cayenne pepper Salt 16 boneless/skinless chicken thighs 2 large onions, sliced Juice of 2 lemons 2/3 cup olive oil 12 pitas Directions Mix all the spices in a small bowl. Wash the chicken, pat dry, and season with salt. Cut the chicken into thinly sliced, bite-sized pieces. Place it in a large bowl, add the spices, and toss to coat. Add the onions, lemon juice and olive oil, and toss to coat again. Cover and refrigerate for at least 4 hours. While Groundcover is a nonprofit, and paper vendors are selfemployed contractors, we still have expectations of how vendors should conduct themselves while selling and representing the paper. The following is our Vendor Remove the chicken from the fridge and let it sit at room temperature while the oven preheats to 425 degrees. Spread the chicken and onions in a single layer on an oiled baking sheet. Roast for approximately 30 minutes until the chicken is completely cooked (you can broil for the last minute for a crispier texture). Serve in a pita pocket with Tzatziki sauce. Many of the spices can be purchased from a bulk grocery store such as People's Food Co-op or By the Pound. Makes 12 servings. I will not “hard sell,” threaten, harass or pressure customers, staff, or other vendors verbally or physically. • I will not sell Groundcover under the influence of drugs or alcohol. • I understand that I am not a legal employee of Groundcover but a contracted worker responsible for my own well-being and income. • I understand that my badge is property of Groundcover and will not deface it. I will present my badge when purchasing the papers. • I agree to stay off private proper t y when sel l ing Groundcover. • I understand to refrain from selling on public buses, federal property or stores unless there is permission from the owner. • I agree to stay at least one block away from another vendor in downtown areas. I will also abide by the Vendor Corner Policy. • I understand that Groundcover strives to be a paper that covers topics of homelessness and poverty while providing sources of income for the homeless. I will try to help in this effort and spread the word.
