12 GROUNDCOVER NEWS FOOD Brazilian blender carrot cake LUIZA DUARTE CAETANO Groundcover contributor Ingredients: 3 medium carrots, washed (no need to peel!) ¾ cup of vegetable oil 3 eggs 2 cups sugar 1 pinch of salt 2 cups flower 2 tsp baking powder Optional: one can of sweetened condensed milk and two tbsp of cocoa powder for frosting! Directions: Preheat the oven to 350F and butter or oil your cake pan. Blend the carrots, oil, eggs and sugar until smooth. Add the flour and baking powder and blend again.
