12 GROUNDCOVER NEWS FOOD Vegan butternut squash chili ELIZABETH BAUMAN Groundcover contributor Ingredients: 1 red onion, diced 2 cups vegetable stock 2 cloves of garlic 1 green pepper, diced 2 ½ to 3 cups cubed butternut squash 28 oz can diced tomatoes 1 1/2 cups canned black beans 1 1/2 cups canned kidney beans 1 tablespoon chili powder, more or less to your preference ¼ teaspoon cayenne pepper Cilantro, chopped Directions: Sauté onions in ¼ cup of vegetable stock or water for 3-5 minutes, then add garlic and sauté for an additional minute. Add the green pepper and sauté for 3 minutes. Add butternut squash and sauté for an additional 5 minutes. Add diced tomatoes and vegetable stock and bring to a boil. Cover and simmer for 20-25 minutes. Finally, add the beans and spices and cook for an additional 5 minutes. Serve topped with cilantro.
