12 GROUNDCOVER NEWS FOOD Baked macaroni and cheese KADEN WATTS Wolverine Pathways student contributor Ingredients: 1 lb dried elbow macaroni ½ cup salted butter ⅓ cup all-purpose flour 1 ½ cups whole milk 4 cups shredded medium sharp cheddar cheese 2 cups shredded Gruyère cheese ½ Tbsp. salt ½ tsp. black pepper ¼ tsp. paprika Directions: Preheat oven to 350F. Boil the pasta, then drain. Make the cheese sauce by combining a fat (butter) and starch (flour) and allowing it to brown and bubble for a minute or two, then slowly whisk in the milk in stages to avoid lumps. Cook the sauce until it’s nice and thick. Add in both kinds of shredded cheese, saving a handful of each kind for topping. Stir well. Combine cheese sauce with cooked pasta. Transfer half of the mac and cheese to a baking dish, sprinkle with shredded cheese. Top with the rest of the mac and cheese, top with remaining shredded cheese.
