12 GROUNDCOVER NEWS FOOD Applesauce ELIZABETH BAUMAN Groundcover contributor Ingredients: 3 pounds cooking apples (about 9) 1 cup water 1/2 cup sugar 1/4 teaspoon ground cinnamon Directions: Peel, core, and quarter apples. In a large pot combine apples, water, sugar and cinnamon. Bring to a boil and then reduce heat. Cover and simmer for eight to ten minutes or until the apples are tender (add more water if necessary). Remove from heat and mash with a potato masher to the desired consistency. Serve warm or chilled. Be sure to stir before serving. I love the applesauce chilled and you can omit the cinnamon if desired. So perfect with fresh apples from the farmers' market. Makes eight servings.
