12 GROUNDCOVER NEWS FOOD Blueberry loaf ALEXANDRA GRANBERG Groundcover contributor Ingredients: 2 and 1/4 cups all-purpose flour 1 cup sugar 1 tablespoon baking powder 1 tablespoon lemon zest 3/4 cup milk (any type, including non-dairy) 1/2 cup neutral oil 1 teaspoon vanilla extract 1 and 1/2 cups blueberries, frozen or fresh Optional glaze: 1 cup powdered sugar 2 tablespoons lemon juice Directions: Preheat the oven to 355F. In a large bowl, whisk dry ingredients, including lemon zest. Mix in wet ingredients. Once fully combined, stir blueberries. Pour into greased loaf pan (or lined with parchment paper). Bake for 60 to 70 minutes, until inserted toothpick comes out clean.
