16 GROUNDCOVER NEWS FOOD Roasted garlic salsa ELIZABETH BAUMAN Groundcover contributor Ingredients: 2 large heads of garlic 3 T. olive oil 2 large tomatoes, chopped ½ cup chopped onions 1 jalapeno, seeded and minced 3 T. chopped fresh cilantro 1 t. salt Dash of Tabasco Sauce Directions: Remove most of the papery skins from garlic, slice off the tops, place in a shallow baking dish and drizzle with olive oil. Roast in the oven at 300 degrees until soft (about 1 hour). Cool and then squeeze garlic cloves from skin and finely chop. Combine with the other ingredients and chill in a covered bowl.
