16 GROUNDCOVER NEWS FOOD Sweet potatoes with maple syrup glaze ELIZABETH BAUMAN Groundcover contributor Ingredients: 2 large sweet potatoes 5 tablespoons olive oil, divided 2 tablespoons butter 2 tablespoons, plus 1 teaspoon maple syrup 2 teaspoons balsamic vinegar Sea salt Black pepper Directions: Peel potatoes and dice into ¾ cubes. Place the sweet potatoes with two tablespoons of water and three tablespoons of olive oil in a large saute pan. Cover and cook over medium heat for six minutes. Remove the lid, add remaining oil, butter, 1 teaspoon kosher salt and ½ teaspoon pepper. Lightly toss and spread in one layer in the pan. Saute uncovered over medium heat until tender (13-15 minutes), be sure to toss occasionally with a spatula. Turn off heat and drizzle potatoes with maple syrup and balsamic vinegar and toss well.
